Animals already do get sick if they have no access to food, etc...I guess I don't understand what you are asking, in that case.

Well, animals that are continually unhappy (like, a social animal by themself) might decrease in health...I've never made it a point to code an animal to GET sick, though.

As far as not having food variety, no, they will not get sick if they are not provided with a nutritionally balanced diet. As long as the food comes up in the zookeeper recommendations, it will eat the food and thus be content hunger wise.
