Due to my affinity for sunken exhibits and non-obstructive views, I almost always use low fencing and no viewing canopies at all.  I always use at least two binoculars and one or two donation boxes depending on the size of the viewing area.  I like to have an educator, too, if there's room, and for elaborate areas also put one statue or little fountain and benches.  If I do use viewing canopies I most often use a bunch in a row.
