A skin is the 'fur' on the ingame animals. A varient skin is a skin that you have a chance of getting instead of the normal one.

So, if I downloaded the albino skin, it could be albino or still have it's original skin?

exactly! They make the game more realistic since animals don't all look exactly alike. You must have the Endangered Species expansion for them to work.  :)
